Our wine expert will take you on a historic wine-making journey harking back 3,500 years, when islanders started to produce wine. Old wine cellars have been converted into the earthy Canava Wine Bar at Vedema, a Luxury Collection Resort, where you can sample some of the very best small production local wines. Learn how they are painstakingly produced using a method unique to Santorini that protects the delicate indigenous grapes from the wind and sun. From Assyrtiko, a crisp white which has travelled far beyond Santorini’s shores, to Mavrotragano, a prized native red wine grape variety saved from extinction, you will come away with expert knowledge on the reasons why the island yields such distinctive wines.
